YOUR HOLIDAY, YOUR PEOPLE

Cook alongside Sal.
Feel at home.

Sal grew up cooking with his mother Maria in Sorrento, then went on to run his own Italian restaurant in London for 17 years. Here, he shares that experience in the kitchen of his home.

You stay in Tierra Fina’s guest casitas and come together at Casa Maria to cook and eat. This is an immersive stay for a couple, two couples, family or friends, with no other participants.

Alongside the recipes come the useful habits of a working kitchen: preparing ahead, freezing well, making versatile base sauces and wasting less.

Practical skills can include preparing a whole sea bass and learning how to fillet a whole fish with Sal, from the first cut to the finished fillets. We agree the dishes and demonstrations with your group before arrival.

A LITTLE STRUCTURE. ROOM TO BREATHE.

Your week.

A sample programme, shaped with your group before arrival. Dishes may vary with season and dietary needs; the Saturday-to-Saturday rhythm can be discussed for other dates.

  1. SATURDAY · ARRIVE

Settle in. Meet Sal. Share dinner.

A welcome aperitivo, time to unwind in your casita and an Italian dinner at Casa Maria ease you into the week.

  2. SUNDAY · COOKING DAY 1

Pasta, fillings and the sauces behind them.

Make fresh pasta, explore tagliatelle and ravioli, and get to know the foundations of Italian sauces. Cook, taste and eat together, with time to rest between the kitchen and the table.

  3. MONDAY · YOUR OWN DAY

    A slower day in Andalucía.

Breakfast, then a day at your own pace: the white villages, the coast, a walk, or simply your terrace at Tierra Fina. Lunch and dinner are yours to arrange.

  4. TUESDAY · COOKING DAY 2

Bread, gnocchi and traditional family cooking.

Work with dough, explore focaccia or pizza and gnocchi, and prepare a traditional main such as cacciatore or osso buco. Shared meals turn the day’s cooking into time together.

  5. WEDNESDAY · YOUR OWN DAY

    Explore, or do very little.

Leave room for a day out or a quiet day here. Breakfast is included; other meals and any outings are arranged separately.

  6. THURSDAY · COOKING DAY 3

    Practical skills, and something sweet.

A final cooking day can bring together preparing a whole sea bass and learning to fillet a whole fish, seasonal dishes, tiramisù, lemon cake or homemade ice cream. Along the way, learn what keeps, what freezes and how to turn one preparation into several meals.

  7. FRIDAY · YOUR OWN DAY

One more day to enjoy the hills.

A final free day to revisit a favourite village, go to the coast or stay at Tierra Fina. Breakfast is included; lunch and dinner are yours to plan.

  8. SATURDAY · DEPART

    Breakfast and a fond goodbye.

Leave with your recipes and notes, and the confidence to cook the dishes again at home.

FLOUR, EGGS & A LITTLE PRACTICE

From the first mix
to the finished dough.

Make it by hand with Sal: mix, bring together and knead, learning how the dough should feel at each stage.

COME AND BE PART OF THE KITCHEN

An Italian dinner,
in our home.

Casa Maria is our home at Tierra Fina, named for Sal’s mother. This is where you cook alongside him: tasting a sauce, shaping pasta and talking about the little details that make a dish work.

Then pull up a chair in the main kitchen. There is the sound of pans at the stove, conversation around the table and the pleasure of eating what you have made together. Wine with dinner, something sweet to finish, and a little homemade limoncello to linger over.

The pace is personal and unhurried. You have your own casita to return to, and time for a quiet terrace, a book or the hills beyond.

YOUR HOME IN THE ANDALUSIAN HILLS

The Tierra Fina
part of the story.

Cooking at Casa Maria, your own casita to return to, and mountain views beyond the terrace. Tierra Fina gives your time with Sal room to become a proper escape.

For four guests, Vine and Jasmine offer two couples, family or friends their own space, with the kitchen and shared meals bringing everyone together. For two, we agree your casita arrangements personally.

A birthday, an anniversary or a present to share with your nearest and dearest: tell us the occasion and we will help you make it personal.
